Discover Hog-It-Up Bbq, Bar & Saloon

Walking into Hog-It-Up Bbq, Bar & Saloon feels like stepping into a place where time slows down and food takes center stage. I stopped by on a busy Saturday evening while passing through Winchester, and the first thing that hit me wasn’t the music or the chatter-it was the smell. That unmistakable mix of hardwood smoke and slow-cooked meat lets you know right away that this kitchen takes barbecue seriously. Located at 692 N Loudoun St, Winchester, VA 22601, United States, it’s easy to find and even easier to remember once you’ve eaten there.

I’ve spent years chasing good barbecue across Virginia and the Carolinas, and what stood out here was consistency. The brisket had a clean smoke ring and pulled apart without falling to mush, a sign of careful temperature control. According to USDA food science guidelines, low-and-slow smoking typically happens between 225°F and 250°F, and you can taste that patience in every bite. The pulled pork followed the same logic-juicy, lightly barked, and not drowned in sauce, which tells me the pitmaster trusts the meat. That approach lines up with what competition judges from organizations like the Kansas City Barbeque Society often emphasize: balance over boldness.

The menu itself reads like a greatest-hits list for a classic barbecue joint. Ribs, chicken, smoked sausage, and hearty sides like mac and cheese and baked beans are all there, but nothing feels phoned in. I ordered the sampler because I wanted the full picture, and it delivered. The ribs came out tender with just enough bite, what pitmasters call fall off the bone but not mushy, while the house sauce leaned tangy rather than sweet. That choice works well for diners who like to control their own flavor rather than being locked into one profile.

What really adds personality to the place is the saloon side of things. The bar stays lively, especially in the evenings, and it’s not uncommon to see locals pairing smoked wings with a cold beer after work. One bartender mentioned that weekends bring in a mix of regulars and travelers, and that matches what I saw in reviews online-people often mention friendly service and a relaxed, no-pressure vibe. From my own experience, orders came out quickly even when the room was full, which speaks to solid kitchen processes behind the scenes.

There’s also a practical side worth mentioning. Portions are generous without being wasteful, and prices stay reasonable compared to other barbecue locations in the region. From a customer standpoint, that builds trust. You don’t feel upsold or rushed, and the staff is happy to explain menu items if you’re new to smoked meats. One server walked me through the difference between dry-rubbed and sauced ribs, keeping it simple and clear, which is exactly what most diners want.

No restaurant is perfect, and it’s fair to say that during peak hours, parking nearby can be tight. A few reviews note short waits during dinner rushes, and that matched my visit, though the wait moved quickly. Still, for food cooked over hours, a few extra minutes at the table hardly feels like a dealbreaker.

Between the well-executed menu, the central Winchester location, and the steady stream of positive reviews, this spot has earned its reputation the old-fashioned way-by doing the basics right, every single day.

  • Amazing good food and Mike was super friendly. If you're ever in the area and want Smokey/bbq food, you will be satisfied! For sure try the Texas Twinkie and the burbon pork tips.

  • Pitmaster Mike is clearly the kind of fanatical, consummate professional who has taken his craft of down home comfort BBQ and secret recipes from his kitchen at home to a smooth-running full scale restaurant establishment, that does many things well at the same time, a relaxing and stylish dining space, complete with beer taps and a full liquor bar! I dipped in here on a Saturday evening for a sandwich of moist tender brisket, tangy potato salad, and an OFF THE CHARTS DELICOUS Cajun dirty rice. One frosty mug of Devil’s backbone Vienna Lager was a perfect accompaniment to help me wash away the cares of a busy week. The food here was so delicious, I ordered some more to take home!

  • Stopped on our way home from Maine to Tennessee. An easy 2 miles off 81. So worth it. Great food. Turkey was great made in a sweet tea brine. I especially loved the Mac and cheese. Loved talking to the owner. It’s worth it if you are driving on 81 near Winchester va

  • Came across this restaurant on Google because husband was craving BBQ. We ordered BBQ Pork Melt and it was really good! Also have a sauce station, free pickle and jalapeño. Wish we could’ve tried the brisket.

  • Parking is behind the business, enter from north Cameron (turn left into lot) or turn right off of loudoun (into alley) to get to the lot behind business. Very friendly staff, welcomed as soon as we walked in and given rundown, introduction to staff, and specials. Lots of specials, lots of alcohol choices. Lots of fun merch to choose from! Mac n cheese ⭐⭐⭐⭐good average Crispy balls ⭐⭐⭐⭐ (see note below) Tropical coleslaw ⭐⭐⭐⭐ Brisket sandwich (bourbon sauce) ⭐⭐⭐ (brisket a little dry) Texas Twinkie ⭐⭐⭐⭐⭐ (best part of the meal) If I could make a suggestion, I would do the crispy balls differently. They are okay, but I feel as though I would love them Pittsburgh style. They are a little non-moist and with the crispy texture they need a little dress up. I would love them on a scoop of oil based slaw, French fries, and a dressing of some kind. All out primantis style would really amp up these balls. They just need a little *it* factor. A lot of live music also available here!! we plead on being back for that and bourbon Wednesdays. Final notes: Exceptional atmosphere and staff (Mike!) Food was okay, just make sure you get a twinkie We plan on coming back soon for social/later in the day events like music and/or bourbon night!

  • Mike is a great host! The food is 10/10. The best BBQ we’ve had locally. The portions are great. The customer service is unmatched.

  • Our family of four visited on a Saturday evening after bowling, and it was a great choice—it's very close to Northside Lanes. I’m not sure if it’s every Saturday, but there was a live bluegrass band playing when we walked in, which added a really nice touch to the atmosphere. There are about 12–15 tables plus bar seating. It looked like only one gentleman was working the front outside of the kitchen, but he kept everything moving smoothly. One area of confusion was the pricing. The brisket sandwiches were advertised as coming with one side, but they rang up with the side priced separately. Not a big deal, but worth noting. That said, the food was delicious—everything tasted homemade. The desserts looked amazing too, but we were too full to try them. The atmosphere was exactly what I’d picture and hope for in a great barbecue restaurant. Overall, it was a really enjoyable experience, and I’d love to see this place stick around and succeed.

  • Mikes Texas barbecue is always amazing. With such a wide variety, choose from there Is something for everyone. Along with delicious desserts. Including his homemade banana pudding. Great place to bring the family or fun for a ladies lunch or dinner out.I love to support local business and not a chain restaurant.
